Taishu Kappo Hisano (Fukuroi izakaya, kappo)

The chef is working behind the counter. I tip my cup as I watch him work. One of the customers says, “This restaurant only serves good food.” I order what he recommends, the mackerel otsukuri, and even enjoy watching the master make it. “Our menu varies with the seasons, so I sometimes have to tell excited customers to wait another year.” The hostess smiles and says in an apologetic tone of voice. Some people visit the restaurant to enjoy specific dishes in specific seasons.
It seems that humans regret more and have more appetite when they find out they can’t eat something they want to eat.
Now I have another reason to come to this city.



The unconventional and adorable chopstick rests are handmade by the students of a nearby orphanage. You can feel how locals are really fond of this place, which has been around for a long, long while.
