If you make a reservation in advance, you can visit the factory that is located in the back of the store. Even though the guide only speaks Japanese, there is so much you can experience with your senses, such as the smell of fermentation and the huge wooden containers.

You can enter this factory from its slightly opened shutter. There you will see confectioners baking fugashi.
Fugashi is a kind of baked good, which is made from flour, gluten, and baking soda. The confectioners spread bake and bake the dough by hand. It expands and gets surprisingly big.
